I am taking some 50 olive trees back into production. &#039;Caillette&#039; is the variety; it makes the &#039;huile d&#039;olive de NIce&#039; AOC. This year we produced 20 liters. None of it will be sold: it&#039;s for family and friends. On tasting the fruit is low-key hazelnut.
