I worked at a sparkling wine tasting room and the remnants were up for staff enjoyment. I used to think long and hard at the end of a work day trying to blend the best of the left over sparkling wines together to create my own palette pleaser.For you there is so much more at steak than just blending for a nights enjoyment.But isn't it fun?!?! A common theme that seems to come up is that in order to make a white wine all one needs to do is follow a blue print. But to make a great red wine one has to be an artist.
